Serving Champagne and Sparkling Wine
Most of us have tried our hand at opening a bottle of sparkling wine, even if it has only been once a year. We're poised just before midnight hoping to open our bottle with just the right amount of ceremony; the build up can be exciting and the act can be a bit messy. Here are a few tips to help you look like an expert when opening any bottle of sparkling wine.
The muselet is the wire cage that holds the cork in place. Because the pressure inside of the bottle can be upwards of 90 psi, sparkling wine requires something more secure than mere foil around the business end. Removing the muselet can cause the cork to pop prematurely, especially if the wine has been agitated, so move the bottle as little as possible the hour before you open it. When removing the muselet, keep a few glasses on hand in case the bottle decides to open spontaneously. Pull the twisted wire tab so that it is perpendicular to the cage and untwist. Loosen the muselet and remove.
Shooting the cork across the room is a rookie maneuver and very dangerous, so resist the urge to fire at the host's cat with your bubbly. In theory, the cork is not removed from the bottle, the bottle is removed from the cork. Grab the cork firmly in one hand and rotate the bottle away from the cork with the other. This insures that if the cork is dry, you won't break it off in the neck or cause it to crumble into the wine. If everything has gone right the cork should release with a gentle, lip smacking sound.
Now it's time to use those glasses you've kept close by. There are two glass shapes used for sparkling wine. The flute glass has a long, narrow shape that conserves the bubbles by restricting the surface area. The coupe glass has a wide disc shape that encourages the bubbles to escape rapidly in the reveler's face. This is the glass you see in all those old Cary Grant movies. Purists prefer the flute shape because it releases the carbonation slowly. Regardless of which glass you choose, you should always drink from a glass that is spotlessly clean; soap residue can distort the taste of wine.
Before you pour, wipe the end of the bottle to clear away any cork. To minimize foaming inside the glass, pour a splash into each glass and then go back and fill each no more than 2/3 full.
Beyond the bottle opening maneuvers, sparkling wine offers those facets that we love about any wine, its color, aroma, flavors that evolve in the mouth, texture, and its finish. Sparkling wine is the icon of celebration. It is the wine that marks milestones. And, if you open it for no reason, you'll soon find that it creates its own cause to rejoice.
