How beer is made
It is believed beer has been around 10,000 years or more. With such a simple recipe it's no wonder that beer has been a popular drink. The grain contains its own yeast. Just add water and wait. Cook the grain and experience some really tasty flavors because heat releases its sugars. In ancient times grains were baked into loaves to be added to water later. Loaves were easily preserved, transported, and were used for barter.
Of course the brews of one thousand years ago tasted completely different than what we drink today. Hops, being one of two prominent flavor components, has only been used for the last five hundred years. The brewing process however, hasn't changed that much in the last few millennia.
Sugar is extracted from the grain by heat, either by roasting or boiling the grain. If the grain is roasted, it is also boiled to further release its sugar. After the boiled extract cools, the liquid (the wort) will usually begin fermentation on its own within a few weeks. There is a big risk in allowing the wild yeasts to start the fermentation process, but up until about one-hundred and fifty years ago, no one knew what yeast was. Chalk another great discovery up to Marie Currie. It was her work that initiated cultivating yeast for beer and wine.
Modern brewers roast grains to create an exact recipe. The boiling process is perfected too. Hops and yeast are cultivated to meticulous standards. If you've ever perused a brewing supply store, you'll be amazed at how many different selections of grain, hops, and yeast that are available for brewing beer.
Different hops strains can be totally bitter, perfume-like and floral, or a combination of both. Each type of malt offers a different flavor profile too. With a little bit of research beer aficionados can determine what they like and dislike because brewers usually list the type of malt and hops on the label. It's research with built-in perks.
