Australia's jammy dilemma
Do you like those jammy ripe Aussie wines? Did you ever wonder why Australian wines are so fruity?
Australia is a very sunny place. The growing season in many regions Down Under lasts all year.
Many farmers and gardeners have warm season crops and cool season crops.
Grapes ripen quickly and the largest growing regions such as Victoria,
South, and South East Australia often have problems with too much ripening.
Grapes like a 9-5 work day. They like warm days and cool nights,
preferring a 30-40 degree drop in temperature every night.
Grapes like a long growing season too.
As grapes ripen, the increase in sugar causes the acidity to decline.
The faster the ripening the quicker the acidity is lost.
More acidity is retained when grapes ripen slowly.
Of course ripe, fruity flavors are very important, perhaps the most important aspect of wine.
A wine lacking acidity, but is very fruit is far more tolerable than a wine lacking fruit,
but has plenty of acid-or at least for our new world palates.
However, acidity offers a complementary facet to fruity flavors.
Acid makes your mouth water, which incites your appetite.
Everything tastes better when you're hungry, plus,
wine with a touch of acidity goes well with food.
Many producers in Australia solve the over-ripening problems by harvesting in several sweeps.
They pick the grapes a bit early to secure some acidity.
They pick when the grapes are ripe, to take advantage of the concentrated fruit flavors.
Each batch of grapes is vinified as soon as they are picked and blended together later.
Producers determine when they will harvest by measuring the grapes sugar,
by tasting the grapes, and by examining the seeds.
A producer can harvest several times in the same vineyard in order to obtain the desired flavor.
It's an artistic skill that can be tasted with each sip.
