If you've been drinking wine since the seventies or eighties, you'll remember the wildly popular days of Soave and Valpolicella. Both wines are produced in the Veneto region of Italy. Veneto has a huge seaport that cradles the Adriatic Sea. Veneto's wine production exploded to meet the needs of the thirsty American market during a post World War Two boom. Valpolicella and Soave were very popular and the eventual growth in production lead to many ordinary wines, lacking depth or character.
While millions of bottles of simple wines were destined for our shores, a few producers in the Veneto were making very respectable wines from grapes groomed for quality. Amarone (ah-mah-ROH-neh), the flagship wine of the Veneto, was unknown to those quaffing down Valpolicella and Soave here in the U.S. back then, but it would soon change Veneto's style and reputation in our market.
Amarone is made by drying the finest grapes in a cool, ventilated room for several months. The grapes have extremely concentrated flavors, tannins, and acidity once most of the water has evaporated. When the juice is fermented completely dry, the resulting wine is called Amarone. It is called Recioto when some residual sugar is left behind after fermentation.
The Italians don't waste a trace of the precious dried Amarone grapes. Winemakers add the pumice of the Amarone, the grape solids leftover after fermentation, to Valpolicella to create something quite special. This process is called ripasso.
Ripassos are appropriately nicknamed 'Baby Amarones.' They possess many qualities of Amarone without the $75 price tag or the decade long rest in a wine cellar to mellow the tannins. Producers have been allowed to say a Valpolicella has undergone ripasso on the label for about a decade. Some still don't disclose when the wine has undergone this process.
Ripassos are sultry with tannins, explosive with red fruits and flavors of a dried summer garden. They can be rich with cherries, berries, tar, licorice, spice, and chocolate. Their acidity and finish are savory.
Of course there is a chasm of difference between Amarone and Ripasso, but the enrichments Amarone solids add to this simple red wine are tremendous. It's exceptional juice at budget prices.
