Unoaked Chardonnay
Chardonnay has been a darling in the wine world for centuries. It is a member of the four noble grapes, the other three being riesling, cabernet sauvignon, and pinot noir. Chardonnay earned its status in the rolling hills of Burgundy and Chablis, France. It is also one of the three approved grapes for making genuine Champagne, along with pinot noir and pinot meunier.
In the new world chardonnay is grown everywhere, from the furthest reaches of the Southern Hemisphere to our West coast vineyards. California grows more Chardonnay than any other variety. Winemakers there have created a style for this grape unique to California. This recipe is aged in new oak barrels, which adds notes of nutmeg, caramel, and butterscotch, along with flavors of oak. This style also is put through malolactic fermentation (nicknamed malo). Malo changes the fruit acidity, which is citrus-like, to a softer malic acid, which imparts round, buttery flavors.
If you examine all chardonnays produced in California over the last fifteen years, you would find this oaky style is overwhelmingly popular. In fact unoaked chardonnays from California are very obscure, but the few examples produced are very impressive.
California uses the Cali-Chard recipe as a default, there is a trend toward using less oak and less malolactic fermentation. While the new world has embraced the standard recipes from the ancient growing regions of Europe, nowhere in the old world has oak and malo been used as extensively as it has been in California.
Often a consumer must seek out this unoaked style because the Cali-Chard recipe is so prevalent. Chablis (the real stuff from France) is known for it stainless steel fermentation. Australia has been moving toward this type of fermentation as well, using the nicknames naked, unwooded, or virgin. California producers disclose that the wine has been exposed to oak because of its popularity. They also admit when the wine has not been exposed to oak, because of this style's obscurity. If you have not tasted unoaked chardonnay you are missing an important category for this grape.
