Dessert wine for those special moments

A true dessert wine is made from grapes that were allowed to hang on the vine beyond their regular harvest. These grapes ripen to saturated sugar levels and concentrated flavors. There are many risks in leaving the grapes on the vine to their typical harvest time. Grapes can be ruined by frost. They are also susceptible to fall rain, which will bloat them with water and dilute their concentration. Then there are molds and fungus that will rot them right on the vine. Every critter around is waiting for those grapes to ripen too, so if the weather doesn't get you, the birds and rodents will. Every day a grower leaves their grapes on the vine is a gamble against mother nature. Grape growers face all these obstacles just getting their regular crop of grapes ripened, imagine the anxiety involved with leaving grapes on the vine into December and beyond.
     High sugar levels allow yeast to create alcohol levels upwards of 16%. Once the wine reaches level of alcohol, the yeast becomes dormant and no more fermentation takes place. A dessert wine producer can then elect to add a dollop of brandy or other spirits to stabilize the wine and elevate the alcohol level beyond 16%. This added alcohol adds more body to the already nectar like wine. Even though the yeast consumed as much sugar as it could, the wine is left with residual sugar (abbreviated RS).
     Dessert wines come from every growing region and represent all price and quality levels. Their flavors are as varied too, with saturated notes of raspberries, marmalade, crushed pecans, toffee, honey, clove, dried pineapples, apple pie, peaches, and chocolate covered cherries. Many are fortified with spirits. Others are infected by botrytis cinerea, or Noble Rot, a mold that draws the water from the grape intensifying its flavors. Late harvested grapes are hand picked with care. Dessert wines are very limited in production, because they are a gamble against the weather.
     Good dessert wines should have a mouthwatering dose of acidity too, which will complement and balance the natural sweetness. Dessert wines can come in ornate bottles in 750ml, 375ml and 187ml sizes. Because of their intense concentration and expense, some small bottles are the perfect size for a dessert libation.
     Indulgent, sweet, rich, and special, dessert wines are the ideal offering for holiday guests. They make a great gift as well. With a wide range of styles and grape varieties, they offer a unique experience with every bottle.
