Recipes with Wine Pairing

Beef Brisket with Peppercorns and Rosemary
Since our Jewish friends are celebrating Hanukkah,
we thought we would feature a recipe that goes well with our
kosher wine, Baron Herzog Cabernet Sauvignon.
Of course readers observing kosher cooking methods will want to
make sure they use ingredients compliant to the laws of kashrut.
We recommend our 337 Cabernet Sauvignon as well.
Ingredients
1 four pound beef brisket or other lean cut of used for roasts (trim away as much fat as possible)
3 tablespoons whole peppercorns, coarsely crushed
(you can use white, green, and pink peppercorns with the black peppercorns if you choose)
1 cup baby carrots or carrots sliced on the diagonal in 1/2 inch slices.
5 medium red potatoes, cut lengthwise into quarters
4 shallots, cut into 1/2 inch wide sections lengthwise
6 cloves of garlic, crushed and peeled
2 tablespoons chopped fresh rosemary,
(substitute 1 tablespoon of dried ground rosemary if fresh is not available)
3 tablespoons flour
1 tablespoon garlic powder
1-2 tablespoons light olive oil
2 cups red wine
(Baron Herzog Cabernet Sauvignon is kosher)
2 cups beef broth
1 teaspoon salt
Directions
Rinse brisket in cold running water and pat dry.
Brush with olive oil.
Coat brisket on all sides with salt and crushed peppercorns.
Sift the flour and garlic powder together in a shallow dish.
Roll brisket in mixture and coat each side evenly.
In a large Dutch oven or stock pot, heat the oil medium heat (hot enough to sear beef).
Add brisket and cook for a few minutes on each side.
Make sure each side is browned.
Add shallots, carrots, potatoes, garlic, and rosemary around brisket.
Pour wine over vegetables in pot,
which is still on the medium heat.
Heat for one minute.
Add the two cans of beef broth.
Bring the liquid to a simmer.
As soon as the broth comes to a simmer, reduce the heat to low.
Cover and cook for two and a half hours.
After two and a half hours check the beef using a meat thermometer (an indispensible kitchen tool).
Rare to medium rare is 140 - 145 degrees F.
Medium to medium well is 150 - 155 degrees F.
Well done roast brisket is 160 degrees F.
Allow the brisket to stand for 10 minutes before slicing.
Slice in thin pieces against the grain of the meat.
Serve the sliced roast beef with the vegetables and red wine broth.
