Layered Pumpkin Cheese Pie
Ingredients:
4 ounce cream cheese softened
Tablespoon each, milk and sugar
1 and 1/2 cups whipped cream
(Cool Whip can be used)
1 prepared graham cracker crust
1 cup cold milk
1 sixteen ounce can pumpkin
2 package instant vanilla pudding (4 serving size)
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
-MIX cream cheese, 1 tablespoon milk and sugar in large bowl with wisk until smooth.
-Fold in whipping cream.
-Spread into crust.
-POUR 1 cup cold milk into large bowl.
-Add pumpkin, pudding mixes and spices mix until well blended.
-Spread over cheese layer in shell.
-Refrigerate 4 hours until set.
-Garnish with additional whipped cream
Cranberry Pear Chutney
(Make up to 2 days ahead)
Ingredients:
4 cups (1 bag) fresh cranberries
1 and 1/2 cups brown sugar packed
2 Bosc or Asian pears (ripe) peeled and cut into small pieces
1 jalapeno seeded and minced
1 cup golden raisins
2 tablespoon lime juice
-In large saucepan, heat cranberries, sugar, and 2 cups water to boiling.
-Reduce heat and simmer until cranberries pop and release juices.
-Add pears, jalapenos, raisins, and lime juice.
-Simmer about 5 more minutes.
-Remove from heat, cover and refrigerate up to 2 days ahead.
-Pair with:
