Stir Fried Shrimp Tossed with Bacon, Mint, and chilies
This is a wonderful dish to serve to guests.
It is also a great treat for the savvy shopper in you.
If you chop the mint, clean shrimp, and cook the bacon ahead of time,
you can throw this together in minutes.
Charles Smith's Kung Fu Girl Riesling
is a perfect match to this exciting dish.
The bright, concentrated flavors of this riesling
create a synergistic effect with the chilies.
The mouthwatering acidity of this wine wakes the taste buds.
Ingredients:
1/4 pound thick sliced bacon, cut crosswise into half inch pieces
3 garlic cloves, minced
4-8 fresh, hot chilies whole
Thai, Serrano, Cayenne, or Fresno.
Vary the number of chilies according to your tolerance to heat and the size of the chilies.
1 and 1/2 pounds shelled and deveined large raw shrimp
1/3 cup dry white wine
1/3 cup coarsely chopped fresh mint leaves
2 teaspoons vegetable oil
Salt and freshly ground pepper
Directions:
In a large skillet, cook bacon over moderate heat, turning frequently.
Once most of the fat has been rendered,
drain the skillet except for two teaspoons of bacon fat.
Add two teaspoons of vegetable oil,
minced garlic, and whole chilies on a medium heat
in the same skillet with the bacon.
Toss until garlic starts to turn transparent,
about 2 to 3 minutes (reduce heat to not burn the garlic).
Turn heat up, add shrimp and toss for 3 minutes,
or until shrimp are opaque and curled.
Add wine and salt and pepper to taste.
Cover for one minute.
Uncover and stir to assure all the alcohol is evaporated.
Add fresh mint and toss until coated, 10-15 seconds.
Arrange on plates immediately, with one or two chilies as a garnish.
Serves four.

Riesling creates synergy with spicy food
I overheard an wine associate proclaim "if I was only allowed to drink one white wine for the rest of my life, I think it would be riesling." I tend to agree with him. Riesling covers all the bases. It's known for its alluring aromas of freshly cut fruit and honeysuckle. When you stick your nose in a glass of riesling you understand why they call it bouquet. I'll bet the first time they used the word 'layered' when describing a wine, they were drinking riesling. It's always complex and can taste clean and refreshing, to exotic and completely distracting. Its finish crescendos in your mouth.
Riesling has a wide palate of flavors to draw from like apples, peaches, apricots, mangos, pineapples, tangerines, lemons, and limes. It also has a perfume-like floral side and often suggests a twinkle of minerality.

There are often flavors of spring blossoms and honeysuckle mingled in the layers. Its mouthwatering acidity offers a compliment to the intense fruit and distinct honey flavors.
Germany has many levels of ripeness and quality with its pinnacle offering being made from frozen, late harvest grapes, a glorious elixir called Eiswein. As a dessert wine, riesling tastes like a liquid sunset, vivid, dazzling, and intensifying.
Riesling is one of the most versatile white wines. It can create a synergy with foods that are not usually complimented by a glass of wine, like ham and turkey. It is fantastic with spicy cuisine like Thai, Indian, Vietnamese or Mexican dishes. The rich flavors of riesling complement the hotness from peppers, onions, ginger, and other hot spices. The wine and the food create a synergy. The wine tastes more vibrant and the food flavors are more focused when drinking riesling with hot food.
Look to the screw cap clad new world versions from New Zealand and Australia. Offerings from Oregon and Washington can be created in an old world fashion with residual sugar or a dry new world fashion. Germans are the experts in vinifying riesling and use the word 'trocken' for their dry versions. Don't overlook the Alsatians, who prefer their riesling completely dry and bottle it in the classic flute bottle.
Refreshing and food friendly, riesling offers flexibility that most other white grapes lack. Of course you don't have to drink riesling exclusively, but with all its versatility and variety you could drink a different bottle every night and always be captivated.
