Sparkling Wine
Every region has its own version of sparkling wine. Italy makes lovely sparkling wines called Prosecco and Spumante. Spain produces Cava. California makes a wide variety of bubbly too. Australians produce some tasty bottles of sparkling, which include a sparkling shiraz. Germany dabbles in it and so do the areas of France that are not called Champagne, like the Loire Valley, the Rhône Valley, Burgundy, and Alsace.
      Sparkling wine from any region is a crisp, bright, carbonated wine with small, tight bubbles. Wine with no carbonation is called 'still wine.' Wines that are slightly carbonated, such as Moscato d'Asti, are called frizzante. Carbonation is created in two basic ways.
      Carbonation can be created by adding more sugar to an already fermented still wine in what is referred to as a second fermentation. Prima Perla Prosecco After the sugar or 'dosage' is added, the still wine is placed under pressure in a bottle or tank. This additional dose of sugar wakes the yeast, which feeds on the sugar. The by-product of fermentation, carbon dioxide, will be trapped in the bottle or tank. This is the same method used to make beer. If the wine has undergone a second fermentation in a tank, this carbonation is preserved by bottling the wine under pressure in a sealed system. Sparkling wine made by a second fermentation retains its carbonation longer than Charmat wines.
      The Charmat method of creating carbonation in a wine is to place the still wine under pressure in a tank and pump carbonation into the tank. The carbonation is trapped in the still wine and will stay there until the pressure is released. The newly created sparkling wine is bottled under pressure in a sealed system. These bottles loose their carbonation very quickly. This bulk method is used in the production of many inexpensive sparkling wines.
      Champagne is considered the finest area in the world for producing sparkling wine. Many believe there is no comparison. The colder weather, lack of sunshine, and chalky soil yields unripe, very acidic grapes. A still wine made from this fruit would be bitter, sour, chalky, and lack fruit flavors, yet these grapes offer the perfect character for an effervescent wine.
      While Champagne lays claim to the finest reputation, (and owns the name Champagne) there are many areas making sparkling wines of superior quality in every price range. Prosecco from Italy's Veneto region are inexpensive and very fun. The Loire Valley of France offers a zesty bubbly made from chenin blanc. California offers the gamut from bulk bottles that cost less than ten dollars, to some very serious, well crafted sparkling wines made from the very grapes that reign in Champagne--chardonnay, pinot noir, and pinot meunier.
      Spain offers a well priced sparkling wine called Cava. Cava is usually made from three traditional Spanish grapes, macabeo, parellada, and xarel-lo, but more chardonnay and pinot noir have been added to these cuvées in recent years. Cava is made in the strictest, traditional method of second fermentation created and perfected in Champagne.
      Sparkling wine is a wonderful way to celebrate a special occasion. It can create its own occasion just by being opened. The equation comparing the spectrum of flavors and value for the price is a fun problem to solve. Enjoy your New Year celebrations with a festive toast of sparkling wine.
