Stop by on Thursday, from 4:30pm to 7:00pm, to taste a collection of wines for your summer sipping pleasure. Refreshing whites, perfect for pairing with chicken, cheese plates, grilled veggies, fish and seafood. Two juicy Aussie reds, great for heartier fare, such as burgers, steaks, and red sauces.

=> The white blend is a compilation of chardonnay, sauvignon blanc, and verdejo. This wine is an Australian nickname for a mailbox on a post. The winemaker of these wines is a master at blending different varieties, bringing forth flavors of melon, baked apples, white flowers, and lemon meringue pie.
=> The unoaked chardonnay is a breath of fresh air. Chardonnay is the queen of white wine grapes and enjoying it in its unoaked state is a refreshing change of pace. Think you don't like chardonnay? Try this zesty white; enjoy its flavors of lime, pineapple, crisp apple, and tangerine. Great acidity on the finish makes this a mouthwatering treat.
=> The red blend contains shiraz, cabernet sauvignon, and merlot. Another take on the mailbox theme. (Knowing this factoid gives insight to the label design, eh?) Juicy and ripe, with smoky tones and plump berry tones. The mid-palate fills with black cherry flavors with hints of vanilla and chocolate cupcake. Delicious and unpretentious, a great red for grilled fare.
=> The shiraz is keeping with the Aussie theme of creating a whimsical label. The Morse Code spells out shiraz. The quality of fruit is shown by its smoldering profile. Flavors of black raspberry, clove, charred spice pods, with a touch of black pepper. This red is fruit driven and fantastic.

Unoaked Chardonnay

Many have never experienced chardonnay that has not been manipulated. The style most of us are familiar with, which dominates the American market, is a California style chardonnay. With its first release, Kendall Jackson Chardonnay captured the market and has been mimicked by practically every domestic producer. This recipe calls for chardonnay fermented and aged in new French oak barrels and then put through malolactic fermentation. New oak barrels impart the most oak flavor, along with notes of caramel and spices like nutmeg. Malolactic fermentation is the process in which the mouthwatering fruit acid in wine is changed to a milk acid, creating a creamy, soft, often buttery flavor.
      If you surveyed the American chardonnay market you would find a lopsided ratio between the Cali-chard and this mysterious unaltered chardonnay. However, naked chardonnay has been an icon in Europe for centuries, under the name Chablis.
      Real Chablis, not the stuff that comes in a jug from California, is unoaked chardonnay grown in a chalky region of France with the same name. Chablis tastes like limes and minerals, green apples and peaches. It makes your mouth water. It can be layered and interesting, yet completely thirst quenching. Sometimes, it can experience malolactic fermentation naturally, which causes a topical twist.
      Now for those of you who do not venture down the French aisle there is no reason to fret. Those zany winemakers from Downunder have taken to making 'unwooded' chardonnay. Many Australians, New Zealanders, and South Americans are dabbling in this noble grape without the California trappings. Their wines are brighter in flavor than Cali-chards and are a surprising change of pace from what you have come to expect.
      Unoaked wines cost less money to produce, because oak barrels, especially French oak barrels are very expensive. Many who thirst for oak flavors want nothing less than French barrels. Producers lacking the budget for barrels might opt for adding oak adjuncts in the form of oak staves, oak beans, and oak dust to their wine, while it is aging in stainless steel or concrete vats. Oak adjuncts add oak flavor quickly, but can cause headaches for some wine drinkers because of the large amount of oak tannins imparted. Oak tannins can trigger histamine reactions in some and the increase in surface area with adjuncts exasperates this problem.
      Of course when a trend emerges that nearly everyone follows, there is always someone going the opposite direction. There was a time when you could scarcely find an unoaked chardonnay from California, but now there are a respectable amount of producers making this pure expression of chardonnay. There is a solid market for unoaked wines, especially chardonnay. Unoaked chardonnay can be as complex as their oak-aged counterparts and even more refreshing.
